The warm hour tests the layout against the number on the door brief, while the room is still empty enough to change it. Room set is signed off before the door opens: the floor walked end to end, every escape route pushed open to the street and allowed to shut itself, signage lit, extinguishers bracketed, the bar gangway clear. A gangway pinched by one badly placed table is obvious now and invisible at eleven.

Fixed, and not movable: the bar run, the booth corner, two columns, one counted way in, two routes out.

03PeakCalled by the desk, confirmed by the door

Full rig, limiter in circuit, floor sitting at its planned number. That number is the floor’s, not the till’s: counted in and out by hand at the one counted door.

The desk calls peak and the door confirms it, because only the door holds the count. If it will not confirm, the cue does not happen.

04LastCalled to the bar and the booth

Last orders is a clock event and nothing else.

Sales stop at the permitted time whatever the queue looks like: shutters down, tills closed, reading taken. Drinking-up time is a separate and shorter window afterwards, and it is not service.

The cue reaches the booth first, so the last record is a known length. A room cut off mid-track turns round to the booth; a room that hears a record finish turns to the door.

05LightsCalled by the desk, over several minutes

From this cue the door is one way

The rig comes up to walk-out level in steps and the music comes down in steps to meet it. Nothing on the desk happens in one move: a room that is suddenly lit stands still, a room that is lifted walks.

Anyone leaving after this cue does not come back in, and the smoking area shuts first. Both are on the door brief, because the alternative is a doorway argument.

06CloseCalled by the duty manager, last out

Close is paperwork. The room is cleared and swept exit by exit, toilets and smoking area included, each walk signed off by whoever made it. Four things are written down before the last person leaves.

    In and out, reconciled, with the peak figure and its time.

  • Refusals

    Transcribed in full, each with time, reason and who refused.

  • Incidents

    A bound book, numbered pages, signed before anyone leaves.

  • Keys and alarm

    Cellar locked, exits secured inside, alarm set by the name on the sheet.
